cooking project of the day
Aug. 19th, 2004 09:18 pmAfter having quiche at Mom's friend's wedding last weekend, Denise has decided it's her new favorite food. Or maybe it always was and this has just reawakened the craving? Either way, we decided to make some this evening.
We had about three-quarters of the suggested ingredients, which is about par for the course, I guess. The recipe called for lard for the crust. What kind of person keeps lard in their kitchen? Not us. We used pre-made pie crust instead. (Yeah, I know, what kind of person keeps pre-made pie crusts in their kitchen? My mother. And I love her for it.) We had to substitute milk for cream in the filling though. Instead of the suggested fillings, we went for finely chopped leftover steak and bits of lo-fat cheddar cheese.
Ended up having to cook it an extra five or ten minutes, probably because of the milk substitution, in order to get it to firm up. Quiche also gets firmer when you let it cool down and eat it cold, but we were hungry, so we decided to just deal with it. Mmm, quiche.
Well, I liked it. I'm not a huge fan of most eggy things, but this is an exception. "It doesn't really taste like quiche," said Denise, who was more amenable to the name "egg pie." Which is oddly fun to say out loud, by the way. My mother thought that the flavor of the steak was too strong for quiche. When I complained we had nothing else, she said we had bacon in the freezer. Oh. We have three freezers, though, so I think I'm justified in having missed it. Then she picked out all the steak bits and gave them to my stepfather, while we all teased her about being picky, since she always teases us. The boys ate it in sullen silence, as they tend to do. Honestly. Boys. I think they liked it though -- Tyler at least would definitely have complained if he didn't. Nobody went for seconds though, which may have been because everyone else ate already or because it wasn't that great. So... kind of moderately successful on the whole, though not as good as last night's four dozen chocolate chip cookies, all of which were gone by noon today, or the brownies from last week. Yes, I cook when I'm bored. :P
